Ingredients

2 cans (15 oz. each) Del Monte® Sliced Peaches in 100% Juice

1 1/2 cups plain, full fat Greek yogurt (5%)

1/4 cup honey

2 tsp. vanilla

Optional Toppings: More peaches, raspberries, blueberries, fresh mint leaves, toasted chopped pecans or almonds, crumbled graham crackers or shortbread cookies

  1. Drain peaches in a colander for 5 minutes then place in a large mixing bowl. Save juice for another use (see Tip). Mash peaches with a potato masher until peaches resemble chunky applesauce.  Stir in yogurt, honey and vanilla until combined well.

  2. Line bottom and sides of an 8 or 9-inch metal baking pan with parchment paper; pour peach mixture into pan.  Place a sheet of parchment paper directly on the surface to minimize ice crystals from forming.  Freeze at least 6 hours or up to 2 weeks before serving.

  3. About 10 minutes before preparing to serve, remove pan from freezer, remove top parchment paper and let pan rest on counter. Holding the parchment lining, lift frozen peach mixture from the pan; turn over onto a flat cutting surface and remove parchment. Cut in half.  Each half makes 2 cups (4 servings) of frozen yogurt.  To serve 2 cups, wrap the other half in parchment and return to freezer. Or, to make 4 cups, just set the other half aside while fixing the first half.

  4. Cut the half of the frozen peach mixture into 1-inch chunks and place in a large food processor.  Pulse to break up chunks then process until smooth and creamy, scraping down sides as needed.   Scoop and serve immediately with toppings, as desired.  Repeat with second half, if desired.  (See Tip below for 2 hour make ahead directions.)

TIPS:

  • Make Ahead: Frozen yogurt can be processed and scooped up to 2 hours in advance of serving before forming ice crystals.  Prepare as directed, and instead of serving right away, scoop with an ice cream scoop onto a parchment paper lined small sheet pan and place in freezer.  When ready to serve, place each scoop into a dessert bowl and top as desired.
  • Save drained peach juice to add to seltzer water, vinaigrettes, fruit salad, cake mix batter, iced tea, lemonade, hot cereal, stir fry sauce or BBQ sauce.
