Ingredients

1 can (15 oz.) Del Monte® Sliced Peaches in 100% Juice, chilled, not drained

1/4 cup fresh lime juice

1/4 tsp. vanilla

24 oz. alcohol-free ginger beer, chilled

Ice

Garnish Options: Fresh mint, lime slices, additional peach slices, blackberries

Directions

  1. Blend peaches, peach juice, lime juice and vanilla until smooth.

  2. Fill 4 glasses half-full with ice.  Pour 1/2 cup peach puree into each glass.

  3. Slowly add ginger beer, stir.  Garnish each glass with a mint sprig and lime slice.  Add a peach slice and blackberries, if desired.

VARIATIONS

  • Prepare as recipe directs, except:
    • Vodka Peach Mules:  In Step 2, add 1 to 1 1/2 oz. vodka over ice in each glass before adding peach puree.
    • Slushy Peach Mules:  Pour blended peach mixture from Step 1 into a standard ice cube tray and freeze at least 6 hours.  About 10 minutes before serving, remove ice cube tray from freezer.  Add frozen peach cubes to a food processor and pulse until slushy.  In each of 4 empty glasses, pour about 6 oz. ginger beer (and 1 to 1 ½ oz. vodka, if using) then 1/2 cup peach slush; stir until mixed. Garnish and serve.
