Southwest Sloppy Joes
Zesty tomatoes add spice to a healthier twist on a classic dish. Nutrient-packed with vegetables and whole grains, these Joes will be become a favorite staple in your busy work week.
1 lb. extra lean ground beef or ground turkey
1 can (15.25 oz.) Del Monte® Whole Kernel Corn, drained
1 can (14.5 oz.) Del Monte® Diced Tomatoes with Zesty Mild Green Chilies, not drained
1 cup water
1 diced green bell pepper
1/3 cup uncooked quinoa or quick cooking bulgur wheat
1 Tbsp. Worcestershire sauce
1/2 cup Del Monte® Tomato Ketchup
12 whole grain or regular hamburger buns, lightly toasted
Brown beef in a large non-stick skillet over medium-high heat, stirring frequently.
Add corn, tomatoes, water, bell pepper, quinoa and Worcestershire sauce to skillet; stir. Bring to a boil over medium-high heat. Reduce heat to low; cover and simmer 15 minutes or until peppers are tender. Remove lid and simmer 5 minutes or until thickened to desired consistency.
Remove skillet from heat; stir in ketchup. Serve on buns.
