Easy Garden Salsa
Full of fresh herbs, bright organic tomatoes and lime juice, this salsa tastes restaurant quality, and is worth the simple prep involved compared to buying premade salsa.
1/4 cup finely chopped white onion
1 Tbsp. fresh lime juice
1 tsp. minced fresh garlic
1/2 tsp. kosher salt
1 can (14.5 oz.) 14.5 oz. Del Monte® Diced Tomatoes
1/4 cup chopped fresh cilantro leaves and tender stems
2 to 3 Tbsp. finely chopped fresh jalapeño, seeds removed, to taste
1 Tbsp. finely chopped fresh mint leaves 1/2 tsp. cumin
Combine onion, lime juice, garlic and salt in a medium bowl; stir and set aside while preparing the other ingredients.
Drain tomatoes very well in a colander (see Tip) then coarsely chop into 1/4-inch pieces; set aside.
Add cilantro, jalapeño, mint and cumin to bowl; stir to distribute ingredients well. Stir in tomatoes; let stand 5 minutes before serving at room temperature.
TIP: Save any drained tomato juices to use in other dishes such as sauces, roasts, soups, stews, braises, chili, beans, grains, slow cooker dishes and beverages.
