4 large chicken breasts

2 Tbsp olive oil

1 Tbsp minced garlic

1 tsp onion powder

1 tsp ground pepper

2 cans 15 oz Del Monte Apricot Halves Lite

1 cup chicken broth

Fresh thyme


  1. Heat a large skillet over medium heat.  Add in olive oil.  Pound each chicken breast between two sheets of parchment paper until 1/2 inch thick.

  2. Season chicken with onion powder and ground pepper.  Place each chicken breast in the heated olive oil.

  3. Cook for 2 to 3 minutes before flipping and cooking an additional 2 to 3 minutes.  Turn heat to low.

  4. Add 1 can Del Monte Apricot Halves (juice included) and chicken broth to the pan.  

  5. Add the other can of Del Monte Apricot Halves to a blender.  Blend until smooth.

  6. Pour this blended mixture into pan.  Simmer for 10 to 15 minutes or until chicken is cooked through completely, at least 165 degrees Fahrenheit internally.

  7. Serve over cooked cauliflower rice or rice.  Garnish with fresh thyme if desired.
