Ingredients

Pre-cooked brown or white rice, frozen or in shelf stable pouches

Prepared rotisserie chicken

Romaine or iceberg lettuce

1 to 2 cans (15.25 oz. each) Del Monte® Southwest Style Corn with Poblano and Red Peppers, well drained

1 can (15 oz.) black beans, rinsed and drained

Topping Options: Salsa, sour cream, jalapeño, avocado, Monterey Jack or Cheddar cheese, cilantro, lime

Directions

  1. Prepare all ingredients before assembling bowls: Heat rice according to the package directions

  2. Chop or pull meat from the warm rotisserie chicken.

  3. Shred the lettuce. Slice or shred any selected toppings, as needed. 

  4. Heat the corn and the beans separately.

  5. Spoon rice on the bottoms of individual dinner bowls. Top with chicken, lettuce, corn and beans. Add desired toppings.
