Pineapple Mojito
A summer beverage that's too good to last. This pineapple mojito mocktail is a must try, with the refreshing flavors of mint, lime and sweet Deluxe Gold pineapple.
Pineapple Mint Puree:
3/4 cup sugar
1 cup water
1 cup fresh mint, firmly packed
1 1/2 cups Del Monte Gold Pineapple Chunks, drained
Mojito Mocktail:
3 lime wedges
2 Del Monte Gold Pineapple Chunks
6 mint leaves
2 ounces light rum (optional)
3 ounces pineapple mint puree
Ice
3 ounces club soda
Optional: Rum
Garnish:
Gold Pineapple Chunks or Slices
Mint leaves
Sliced lime
Combine the water and sugar in a small saucepan. Bring to a boil and stir until the sugar dissolves. Remove from the heat and stir in the fresh mint. Let the syrup sit until it cools.
While the syrup is cooling, place the Del Monte Gold Pineapple Chunks in a blender and puree until smooth, about 2 minutes. Pour the cooled syrup into the blender and pulse a couple times to combine. Pour the pineapple puree into a jar and chill until ready to use.
Place the lime wedges, Del Monte Gold Pineapple Chunks, and mint in the bottom of a cocktail shaker. Lightly muddle and then fill the shaker with ice. Add the rum, if using, and prepared pineapple puree and shake until icy cold and frosted, about 30 seconds.
Do not strain; pour into 2 lowball glasses. Add ice and top with club soda. Garnish with more Del Monte Gold Pineapple Chunks, mint leaves and lime. Enjoy!
