Ingredients

10 to 12 large fresh mint leaves, divided 

1 large fresh lime    

1 fruit cup (7 oz.) Del Monte® Escapes Pineapple Piña Colada, chilled 

3 oz. rum (6 Tbsp.)

1/2 cup ice cubes (about 4 or 5)

4 oz. (1/2 cup) cold club soda, divided

Garnish: 2 small mint sprigs, 2 half-slices lime, straw

Directions

  1. Divide mint between two tall glasses.  Press and rub mint against the glass with the back of a long spoon several times to express the mint oils; leave mint in glasses. Cut a lime in half across the middle; cut a thin slice from one half and cut the slice in half for the garnishes. Cut a small slit in the juicy side of the lime halves and fit it onto the rims of the glasses; set aside.

  2. Juice the remaining lime pieces directly into the blender (2 Tbsp.).  Add contents of Escapes cup, rum and ice.  Blend on high until smooth about 30 seconds; pour 1 cup into each glass. Slowly top each with 1/4 cup club soda and stir. Garnish with mint sprig and enjoy. Cheers!

TIPS:

  • Chill the Escapes cups in the refrigerator at least 2 hours before making cocktails.
  • To squeeze the most juice from the lime: Before cutting the lime, place it on the counter; press and roll back and forth with the heel of your hand until it softens slightly. Then cut and use a citrus reamer or citrus press to extract the juice. 

Pineapple Nojito - NA Alternative

Minty and refreshing, this mocktail is made without rum and is just as festive and pretty as its cocktail cousin.  Most NA rum alternatives taste more like spiced rum, but a teaspoon of vanilla that’s likely already in your pantry, adds a clean, delicious depth of flavor that’s closer to the original. 

INGREDIENTS:

  • 1 tsp. vanilla extract

  • 1/2 cup ice cubes (about 4 or 5)

  • 4 oz. (1/2 cup) cold club soda or ginger ale, divided

  • Garnish: 2 small mint sprigs, 2 half-slices lime, straw

TIPS:

  • Instead of vanilla extract, use 2 oz. non-alcoholic rum (4 Tbsp.).
