This popular restaurant dish is easy to make at home. It comes together quickly so it’s best to prep all the ingredients in advance before starting to cook.
Marinade1 1/4 lb. boneless, skinless chicken breasts, cut into 1/4-inch strips
2 Tbsp. reduced sodium soy sauce
1 Tbsp. corn starch
1/2 tsp. black pepper
Noodles 3 pkg. (3 oz. each) chicken flavor instant ramen noodle soup
Sauce 2 cans (14.5 oz.) Del Monte® Southern Style Whole Green Beans
2 Tbsp. oyster sauce or 1/4 cup reduced sodium soy sauce
2 Tbsp. cornstarch
1 Tbsp. honey
Stir Fry 2 Tbsp. vegetable oil
1 medium onion, sliced into 1/8-inch wide wedges (about 1 1/2 cups)
1 large red bell pepper, sliced into thin strips
2 Tbsp. fresh ginger, minced or 5 frozen cubes minced ginger
3 cloves garlic, minced or 3 frozen cubes minced garlic
Topping Options: Green onion, toasted sesame seeds, cilantro, chili garlic sauce
Marinade: In a medium bowl, toss chicken with soy sauce, cornstarch and pepper; set aside for 10 minutes.
Noodles: Bring a large pot of water to a boil. Add noodles and cook 3 minutes. Reserve 3/4 cup cooking water; drain noodles and return to pot. Add reserved water and contents of 1 seasoning packet (discard the other 2). Stir to coat well. Divide noodles into individual pasta bowls.
Sauce: Shake cans of green beans; drain into a colander set over a medium bowl, saving the bean sauce and setting the beans aside. Add oyster sauce, cornstarch and honey into the bean sauce; stir and set aside.
Stir Fry: Heat oil in a 12-inch non-stick skillet over medium-high heat until it shimmers. Add chicken; spread out to 1 layer and brown on 1 side for 2 minutes without stirring. Flip chicken and cook 2 to 3 minutes, stirring frequently, until no longer pink looking. Add onion, bell pepper, ginger and garlic; cook 2 to 3 minutes, stirring constantly, until onion begins to soften. Stir sauce then pour into skillet. Increase heat to high and cook 1 to 2 minutes until bubbly and somewhat thickened. Gently stir in green beans; cook 1 minute until beans are hot and sauce is thickened. Spoon over noodles and serve with toppings.
