Winter Veggie Power Bowl
Make a nutritious grain bowl topped with hearty winter veggies, fruits and nuts- this bowl is bursting with vibrant colors and textures.
2 cups cubed butternut squash
2 tbsp olive oil
½ tsp garlic powder
½ tsp salt
2 cups spring mix
2 cups brown rice, quinoa and lentils, cooked
1 can (14.5oz) Del Monte Fresh Cut Sliced Beets
½ apple, sliced
1 avocado, sliced
¼ cup walnuts
Preheat oven to 375.
Toss butternut squash in olive oil, garlic powder and salt. Spread on baking sheet in a single layer. Bake for 30-35 minutes and set aside.
Add spring mix to plates, along with brown rice, quinoa and lentils. Top with Del Monte Fresh Cut Sliced Beets, apple slices, avocado, walnuts, and top with your dressing of choice!
