Easy Reuben Wraps
This warm wrap has all the flavor of a traditional Reuben sandwich in a fun, easy-to-eat form. Perfect for lunch or dinner, served with a side of fruit, sweet potato fries or whole-grain chips.
1 cup Thousand Island dressing, divided
4 burrito-size flour tortillas
8 slices Swiss cheese
8 oz. thinly sliced deli corned beef or smoked turkey
1 1/3 cups drained Del Monte® Sauerkraut
1 1/3 cups baby spinach or kale
Preheat oven to 425°F. Line a sheet pan with foil; lightly coat with cooking spray.
Spread 1 Tbsp. dressing (leave a 1/2-inch border) on each tortilla. Place 2 slices cheese side-by-side, then evenly layer 2 oz. corned beef, 1/3 cup sauerkraut and 1/3 cup spinach.
Fold in left and right sides about 1 1/2 inches. Tightly roll up from the bottom. Place seam-side down on baking sheet; spray tops with cooking spray. Bake 10 minutes and rest 2 minutes before cutting in half. Serve with remaining dressing for dipping.
