Ingredients

1 can 20oz Del Monte Deluxe Gold Pineapple Chunks, liquid reserved

1 Tbsp soy sauce

2 Tbsp honey 

1½ Tbsp rice wine vinegar

1 Tbsp ketchup

1½ lb chicken breast, cut into 1” pieces 

2 Tbsp starch

1 Tbsp avocado oil

¼ onion, chopped

1 bell pepper, chopped 

2 bunches baby bok choy, chopped

2-3 cloves garlic, minced

1 tsp minced ginger

Directions

  1. Whisk together the sauce: ¼ cup pineapple juice, soy sauce, honey, rice wine vinegar, & ketchup. Set aside.

  2. Season chicken generously with salt and pepper. Mix with starch.

  3. Heat avocado oil in a skillet. When hot, add chicken & cook for 5-6min until 90% done. Set aside.

  4. In the same skillet, sauté onion, bell pepper, & bok choy for 2-3min to soften. Add garlic & ginger, toasting for additional minute. Season lightly with salt and pepper.

  5. Add cooked chicken & sauce into the skillet. Cover & let simmer for 2-3min or until thickened. Season to taste.

  6. Serve with brown rice & top with green onion.
