Layered Taco Bake

Taco toppings finish this simple and fun one-pan meal oven from the oven.
1 lb. lean ground beef or ground turkey
2 Tbsp. chili powder
2 cups uncooked instant white or brown rice
1 1/2 cups water
2 cans (14.5 oz.) Del Monte® Vegetable & Bean Blends Mexican Style, not drained
3 cups shredded Mexican cheese blend or Cheddar cheese, divided
Toppings
2 cups coarsely crushed tortilla chips
2 cups shredded iceberg or romaine lettuce
1 cup diced tomatoes
1/2 cup sliced green onions
Sour cream, optional
Preheat oven to 400°F. Brown meat with chili powder in a large skillet over medium heat. Stir in rice. Spread evenly in a 9x13-inch baking dish. Pour water over meat-rice mixture.
Sprinkle evenly with 1 1/2 cups cheese then vegetables and then remaining cheese. Cover tightly with foil.
Bake in center of oven 30 minutes until bubbly. To serve, layer tortilla chips, lettuce, tomatoes and green onion over hot dish. Dollop with sour cream, if desired.
