Cranberry, Cabbage, & Corn Slaw
A tangy-sweet dressing coats coleslaw mix, crisp corn, crunchy almonds and dried cranberries in this easy, festive salad that's a great make-ahead salad since it doesn't wilt quickly.
Dressing:
1/4 cup olive oil
2 Tbsp. apple cider vinegar
1 Tbsp. maple syrup or honey
1 Tbsp. Dijon mustard
1/4 tsp. kosher salt
1/2 small red onion, finely chopped
Slaw:
1 bag (14 oz.) tri-color coleslaw mix (about 6 1/2 cups)
1 can (11 oz.) Del Monte® Summer Crisp® Whole Kernel Golden Sweet Corn, well drained
1 cup sliced almonds, toasted
1 cup dried cranberries
1/2 cup chopped fresh parsley
Kosher salt and ground black pepper, to taste
Whisk together dressing ingredients in a large bowl.
Add coleslaw mix, corn, almonds, cranberries and parsley; toss to combine. Season to taste with salt and pepper.
