Roasted Beet Whipped Feta
A pretty pink appetizer that looks great and tastes even better! Made with Del Monte Fresh Cut Sliced Beets, this recipe easy to whip up and adds beautiful color.
8 oz. block feta, drained
1/2 cup Greek yogurt
1/3 can Del Monte Sliced Beets, drained
zest from 1 lemon
2 Tbsp. olive oil
chopped chives, for topping
additional olive oil, for drizzling
assorted vegetables, for serving
assorted crackers, for serving
Add the feta, Greek yogurt, Sliced Beets, and lemon to a food processor.
Blend the ingredients together. While blending stream in the olive oil.
Spoon the feta into a serving dish. Top with chives and a drizzle of olive oil.
Serve with assorted vegetables and crackers.
