BBQ Sloppy Joes with Corn Slaw

Quick Night is restaurant-style hot BBQ sandwiches with crispy slaw right in the bun and more on the side. Sweet potatoes fries are an ideal partner. Day 1 is Carnitas-Style Pork Tacos with Mashed Beans.
Reserved pork and sauce from Day 1
1/4 cup bottled barbecue sauce
4 hamburger buns or rolls
Easy Corn Slaw
2 Tbsp. sour cream or mayonnaise
2 Tbsp. lime juice
2 Tbsp. finely diced red or green onion
1 tsp. sugar
Salt and black pepper, to taste
3 cups finely shredded cabbage (about ½ of 7 oz. bag shredded cabbage)
1 can (15 oz.) Del Monte® Whole Kernel Corn, well drained
Hot baked sweet potato fries, optional
Skim off remaining fat from reserved tomato sauce. In a medium saucepan, combine BBQ sauce with reserved pork and ½ cup reserved tomato sauce. Heat over medium heat, stirring occasionally, about 5 minutes or until hot. Add additional tomato sauce to moisten meat, if desired, and heat through.
For slaw, stir together sour cream, lime juice, onion, sugar, salt and pepper in a medium bowl. Add cabbage and corn; toss to coat well.
Top buns with pork and slaw. Serve extra slaw on the side with sweet potato fries, if desired.
