Tropical Mule Mocktails
Sweet mango, tangy pineapple and spicy Tajín come together in this easy drink that's effervescent from ginger beer. Make it as a pitcher or as single drinks. Gently stir the pitcher before filling and refilling glasses.
2 tsp. Tajín® Clásico Seasoning, divided
1 Tbsp. granulated sugar
2 lime wedges
1 tub (52 oz.) Del Monte® Mango and Pineapple in Extra Light Syrup
1/3 cup fresh lime juice
Ice
48 oz. alcohol-free ginger beer, chilled
Garnish Options: Fresh mint, lime slices
Place 1/2 tsp. Tajín and sugar on a small flat dish that's at least the diameter of the mule cups or cocktail glasses and stir to combine. Moisten the rim of each cup with a lime wedge. Place the rims into the sugar mixture, turning until coated.
Drain mango and pineapple in a strainer set over a bowl. Transfer all the fruit and 1 cup of the syrup to a blender; reserve the remaining syrup for another use (see Tip).
Add lime juice and remaining 1 1/2 tsp. Tajín to blender; blend until very smooth. To make a pitcher drink that will stay fizzy for 1 hour, pour puree into a large pitcher (at least 2 1/2 qt.). Slowly pour in the ginger beer and gently stir with a long spoon to combine.
Fill each glass half-full with ice then pour in about 1 1/4 cups of the mule. Garnish each glass with a mint sprig and lime slice, as desired.
