Ingredients

2 tsp. Tajín® Clásico Seasoning, divided
1 Tbsp. granulated sugar
2 lime wedges
1 tub (52 oz.) Del Monte® Mango and Pineapple in Extra Light Syrup
1/3 cup fresh lime juice
Ice
48 oz. alcohol-free ginger beer, chilled

Directions

  1. Place 1/2 tsp. Tajín and sugar on a small flat dish that's at least the diameter of the mule cups or cocktail glasses and stir to combine. Moisten the rim of each cup with a lime wedge. Place the rims into the sugar mixture, turning until coated. 

  2. Drain mango and pineapple in a strainer set over a bowl. Transfer all the fruit and 1 cup of the syrup to a blender; reserve the remaining syrup for another use (see Tip).

  3. Add lime juice and remaining 1 1/2 tsp. Tajín to blender; blend until very smooth. To make a pitcher drink that will stay fizzy for 1 hour, pour puree into a large pitcher (at least 2 1/2 qt.).  Slowly pour in the ginger beer and gently stir with a long spoon to combine. 

  4. Fill each glass half-full with ice then pour in about 1 1/4 cups of the mule. Garnish each glass with a mint sprig and lime slice, as desired. 

Variations:

Prepare recipe as directed, except:

  • Vodka or Rum Tropical Mules:  In Step 4, pour 1 to 1 1/2 oz. vodka or white rum over the ice in each glass before adding the mule mixture.
  • To make single drinks: Do not combine the purée with the ginger beer in Step 3. Fill a glass half-full with ice, pour in 1/2 cup of the purée then 3/4 cup ginger beer.

Tip:

  • Save any drained syrup to add to smoothies, vinaigrettes, fruit salad, seltzer water, cake mix batter, iced tea, lemonade, hot cereal, stir fry sauce or BBQ sauce.
