Ingredients

CHEESY CORN & BEEF TACOS

- 1 can of Del Monte Mexican Style Street Corn, drained

- 400 g ground beef

- 1.5 TBSP mayonnaise

- Salt & Pepper

- 1 tsp Chili powder

- 1 TBSP lime juice

- 2 TBSP butter

- 1/4 cup shredded queso oaxaca

- 1 TBSP cotija cheese

- 1 bunch Cilantro

- Tortillas

SALSA VERDE

- 1 lb tomatillos

- 2 jalapeños

- 2 garlic cloves

- 1/2 white onion

- 1 handful of Cilantro

- 1/2 lime juice

- Salt

Directions

  1. FOR TACOS:

    Sear ground beef in cooking oil with salt and pepper until it builds a nice crust. Strain 1 can of Del Monte Mexican Style Street Corn and mix with Mayonnaise, chili powder and lime juice before combining it with the ground beef and butter to cook for 10 minutes on medium low heat.

  2. Cover with Oaxaca cheese and let it melt before topping with more chilli powder, cotija cheese and cilantro.

  3. FOR SALSA VERDE:

    Roast tomatillos, garlic, jalapenos, onions with salt at 400F for 15 minutes in the oven.

  4. Blend the roasted ingredients with fresh cilantro and lime juice.

 

TIP:

Assemble the tacos in a medium heat pan to warm up the tortillas and bring all the ingredients together.
