Quick Pickled Peaches
These tangy peaches are a bright and flavorful condiment for meats, salads or sandwiches. Top grilled or roasted chicken or pork; toss in a green or grain salad; spoon onto pulled pork or BBQ sandwiches.
1 can (15 oz.) Del Monte® Sliced Peaches in Heavy Syrup
1/4 cup white or apple cider vinegar
2 Tbsp. sugar
1/2 tsp. salt
Choice of dry spices (see below)
2 Tbsp. diced red onion
Dry Spice Options (choose 1):
Drain peach syrup into a microwave-safe glass measuring cup or a small saucepan. Add vinegar, sugar, salt and dry spice choice.
Microwave on HIGH 1 minute or heat over medium-high heat just to simmering. Stir to dissolve sugar and salt.
Pour hot liquid over peaches and onion in a medium heat-resistant bowl. Let stand until cool. Store covered in refrigerator for up to 3 days.
NOTE: Recipe can be doubled.
