Ingredients

1 egg

1 Tbsp. olive oil

4 oz. feta, crumbled (about 3/4 cup)

10 Del Monte® Garlic Stuffed Olives, chopped (about 1/2 cup)

1/4 cup finely chopped red onion

1 Tbsp. finely chopped fresh mint

2 tsp. dried oregano

1/4 tsp. cayenne

1 lb. lean ground turkey, chicken, pork or lamb

1/4 cup Contadina® Italian Inspired Bread Crumbs

Directions

  1. Heat oven to 425°F. Line a large, rimmed sheet pan with parchment paper; set aside.

  2. Lightly beat egg with olive oil in a large bowl. Add feta, olives, onion, mint, oregano and cayenne; stir to combine.

  3. Add ground turkey; sprinkle with bread crumbs. Mix with hands just until all ingredients are distributed evenly. Do not over mix to avoid tough meatballs.

  4. Lightly roll mixture into about fifteen 2-inch balls and place onto parchment paper with space between each for even browning. Bake 15 to 20 minutes or until lightly browned and 165°F internal temperature.

TIP: Store cooled, cooked meatballs in a zip-top bag in freezer for up to 2 months. To reheat, simmer frozen meatballs in sauce about 10 minutes or bake at 350°F for 15 minutes until heated through.
