La Piña Del Monte®-ni

Sweet pineapple, balanced with the subtle heat of red chili pepper, creates an icy cool cocktail sure to become a favorite house drink. Great alcohol-free option too!
1 can (15.25oz.) Del Monte® Crushed Pineapple in 100% Juice, chilled, not drained
2 red Fresno chilies, seeded and thinly sliced into rings
1¼ cups vodka
⅔ cup dry vermouth
ice cubes
1 can (15.5oz.) Del Monte® Pineapple Chunks in Heavy Syrup, well drained
For each cocktail, combine 3 Tbsp. crushed pineapple, 3 chili slices, 2 oz. vodka and .5 oz. vermouth in a cocktail shaker. Add ice to fill shaker 1/2 full. Shake vigorously; strain into chilled martini glass.
Garnish with cocktail pick skewered with pineapple chunk, topped with chili ring.
VARIATION: To make Virgin La Piña Del Monte®-ni, combine 3 Tbsp. crushed pineapple and 3 chili slices in a cocktail shaker. Add ice to fill shaker 1/2 full. Shake vigorously; add 1/3 cup chilled ginger ale. Strain into chilled martini glass. Garnish with cocktail pick skewered with pineapple chunk, topped with chili ring.
