Ginger Mandarin-Pear Salad
A new and wholesome take on ambrosia fruit salad – enjoy the creamy goodness from Greek yogurt and the crunch from celery and almonds.
½ cup nonfat plain Greek yogurt
3 Tbsps. honey
3 tsps. grated fresh ginger
2 can (15oz.each) Del Monte® Mandarin Oranges in Light Syrup, well drained
1 can (15.25oz.) Del Monte® Lite Sliced Pears in Extra Light Syrup, well drained and chopped
1 cup sliced celery
½ cup (2oz.) slivered almonds, toasted
⅓ cup chopped fresh mint leaves
Stir together yogurt, honey and ginger in a medium bowl until well blended.
Gently stir in remaining ingredients. Top with additional mint, if desired.
NOTE: To toast almonds, place almonds in a heavy ungreased skillet over medium heat. Stir frequently until fragrant and golden brown, about 5 to 6 minutes.
