Ingredients

1 can (14.5 oz.) Del Monte® Zesty Italian Inspired Cut Green Beans, not drained 

1 can (15 oz.) chickpeas, rinsed and drained 

1/4 cup finely diced red onion 

Zest and juice of 1 large lemon (2 tsp. zest, 3 Tbsp. juice) 

1 Tbsp. olive oil 

1/4 tsp. each kosher salt and black pepper 

Frozen cooked brown rice, heated as package directs for 4 servings 

 

Toppings: Cherry tomatoes, cucumber, feta, fresh mint, tzatziki sauce 

Protein Options: Rotisserie chicken, sautéed shrimp or salmon

  1. In a medium microwave-safe bowl, combine contents of green bean can, chickpeas, onion, lemon juice, lemon zest, olive oil, salt and pepper. Cover bowl with a paper towel; microwave on HIGH 2 to 3 minutes until hot. 

  2. Divide hot rice into four bowls. Divide green beans and chickpeas onto the rice using a slotted spoon to drain from marinade, reserving the marinade. Add toppings and a protein, if desired. Drizzle with reserved marinade.

TIP:

To meal prep, place rice, chickpea-green bean mixture and protein, if using, in individual microwave-safe, airtight containers. Portion marinade and toppings in separate containers and refrigerate all up to 3 days. Reheat, uncovered, in microwave 2 to 3 minutes on HIGH; add toppings and marinade.
