Spicy Chipotle Jackfruit Tacos & Pineapple Salsa

Spicy chipotle jackfruit tacos with a bright pineapple salsa make for the perfect Taco Tuesday!

Salsa
1 20 oz can Del Monte Deluxe Gold Pineapple Tidbits, drained, rinsed, and diced
1/4 cup chopped cilantro, unpacked
3 tbsp diced red onion
1/2 serrano pepper, center stem and seeds removed
Juice of 1 lime
Salt to taste
Spicy Chipotle Jackfruit Tacos
2 14 oz cans young jackfruit in water, drained and shredded
3-4 tbsp chipotle in adobo, blitzed in a blender or just use the sauce
1 tbsp olive oil
Salt to taste
Corn tortillas, shredded cabbage/carrot, and lime to serve
For the salsa: Add Del Monte Deluxe Gold Pineapple Tidbits, cilantro, onion, serrano, and lime juice to a medium bowl. Stir to combine. Season with salt to taste.
In a medium bowl, toss jackfruit with chipotle sauce.
Heat olive oil in a large pan over medium high. Add jackfruit, occasionally stirring for 7-10 minutes until jackfruit becomes tender.
Serve on heated tortillas with pineapple salsa.
