Chicken Tot Pie
Super easy comfort food. This recipe has a fun tot topping and can be prepared with leftover chicken, Thanksgiving turkey or Easter ham.
2 cans (10.5 oz. each) condensed cream of chicken soup, not diluted
1 cup milk
1 tsp. dried thyme
1/4 tsp. black pepper
2 to 3 cups cubed or pulled cooked chicken, turkey or ham
1 can (15 oz.) Del Monte® Sweet Peas, drained
1 can (14.5 oz.) Del Monte® Sliced Carrots, drained
1 can (14.5 oz.) Del Monte® Cut Green Beans, drained
4 cups (16 oz.) frozen potato tots
1/4 cup sliced green onions or chopped fresh parsley, optional
Heat oven to 425oF.
Gently whisk together soup, milk, thyme and pepper in a 9x13-inch baking dish. Add chicken, peas, carrots and green beans. Top evenly with tots.
Bake, uncovered, until sauce in center is bubbly and tots are golden brown, about 35 to 40 minutes. Let stand 5 minutes before serving. Sprinkle with green onions or parsley before serving, if desired.
