1 cup uncooked long grain white rice

1 can (14.5 oz.) Del Monte® Fire Roasted Diced Tomatoes with Hatch Green Chilies, not drained

1 1/4 cups water

Directions

  1. Heat oil in a medium saucepan over medium-high heat. Add rice; cook 1 to 2 minutes, stirring constantly.

  2. Carefully add tomatoes and water; bring to a boil. Cover; simmer over low heat 15 to 20 minutes or until liquid is absorbed.

  3. Stir; let stand 5 minutes.
