Salsa Rice
Lightly toasting the rice before cooking gives a special, authentic flavor. Delicious served with tacos, grilled chicken or beef.
2 tsp. vegetable oil
1 cup uncooked long grain white rice
1 can (14.5 oz.) Del Monte® Fire Roasted Diced Tomatoes with Hatch Green Chilies, not drained
1 1/4 cups water
Heat oil in a medium saucepan over medium-high heat. Add rice; cook 1 to 2 minutes, stirring constantly.
Carefully add tomatoes and water; bring to a boil. Cover; simmer over low heat 15 to 20 minutes or until liquid is absorbed.
Stir; let stand 5 minutes.
