Smash Ranch Tacos
A fun and easy-to-eat cross between smash burgers, quesadillas and tacos. These smash tacos are a favorite for family dinner.
1 can (14.75 oz.) Del Monte® Ranch Flavored Whole Kernel Corn, drained and divided
1/2 cup finely diced red onion
1 Tbsp. chili powder
1 Tbsp. fresh lime juice
1 tsp. kosher salt
1 lb. lean ground beef (94%) or ground turkey
Six (6-inch) flour tortillas
6 tsp. vegetable oil, divided
Spicy ranch dressing, shredded lettuce, diced tomato, shredded cheese, sour cream, avocado slices, lime wedges
Mix together 1/2 cup of drained corn, onion, chili powder, lime juice and salt in a medium mixing bowl. Add beef and combine well. Divide beef mixture into 6 equal portions (about 1/3 cup each) and place 1 portion on each tortilla. Spread or press the meat mixture into a thin even layer reaching the tortilla edges.
Heat 1 tsp. oil in a nonstick skillet over medium heat. Place a tortilla meat-side-down and cook 2 to 4 minutes until meat is well-browned, pressing on tortilla with a spatula occasionally to improve the browning. Flip and cook about 1 minute until tortilla is browned and crispy. Adjust heat, as needed, to avoid burning. Transfer to a plate and repeat with remaining oil and tortillas.
To serve, fold meat side together to form a taco; fill with desired toppings.
