Ingredients

2 tsp butter, at room temperature
2 slices thick slices bread
1.5 oz cheddar cheese
2 tsp honey or spicy honey
1/4 cup Del Monte Crinkle Cut Pickled Beets
1.5 oz goat cheese, crumbled

Directions

  1. Spread butter on one side of each bread slice. Working with the buttered side down, add cheddar in an even layer, then honey, pickled beets, and goat cheese to a bread slice. Top with the other piece of bread, buttered side out to form the sandwich.

  2. Heat a skillet over medium heat and spray with cooking oil. Carefully place the sandwich on the pan and cook for 3 minutes, covering with a lid to help the cheese melt. Flip, then cook for another 3 minutes, covering again. Slice, and enjoy!
