Pea Fritters with Fresh Mint Sauce

Peas and mint, a classic flavor pairing, star in this side dish that easily dress up the table at weekend dinners or family gatherings.
4 large egg whites
2 can (15oz.each) Del Monte® Sweet Peas, well drained
1 cup finely chopped red bell pepper
⅔ cup chopped green onion
¼ cup chopped fresh parsley
½ cup all-purpose flour
Salt and black pepper, optional
vegetable oil, 2 to 4 Tbsp., divided
½ cup finely chopped fresh mint
3 Tbsps. olive oil
2 tsps. grated lemon zest
¼ cup fresh lemon juice
1 tsp. sugar
Salt and black pepper, optional
For fritters, whisk egg whites in a medium bowl. Add 1 can of peas; mash with a fork. Stir in remaining can of peas and remaining ingredients except oil.
Heat 1 Tbsp. oil in a large non-stick skillet over medium heat. Working in batches, spoon 1/4-cup mounds of pea mixture in the skillet; flatten mounds slightly with a spatula and cook about 3 minutes on each side or until golden. Place on a serving platter and repeat with remaining oil and pea mixture.
Meanwhile, stir together sauce ingredients. Serve fritters with sauce.
