Ingredients

1 jar (16 oz.) Del Monte® Crinkle Cut Pickled Beets

1/4 cup finely chopped red onion

1/2 cup plain whole-milk Greek yogurt
1/4 cup mayonnaise

2 Tbsp. chopped fresh dill

Finely grated zest of 1 lemon

1 English cucumber, quartered lengthwise, cut into 1/2-inch pieces

8 slices cooked and crumbled bacon, divided

Directions

  1. Drain beets, reserving 1 Tbsp. pickling liquid. Combine pickling liquid with red onion in a large bowl; let stand 10 minutes. Stir in yogurt, mayonnaise, dill and lemon zest.

  2. Cut large beets into bite-sized pieces. Stir beets, cucumber and 2/3 of the bacon into dressing.

  3. Season to taste with salt and pepper. Garnish with remaining 1/3 bacon.
