2 Tbsp. butter

1/2 cup chopped onion

1/4 tsp. dried thyme

2 cans (14.5 oz. each) Del Monte® Vegetable & Bean Blends Classic Style, not drained

1 1/2 cups water

1 1/2 cups uncooked instant white rice


  1. Melt butter in a large saucepan over medium heat. Add onion and thyme and cook 3 to 4 minutes or until onion is softened.

  2. Stir in vegetables, water and rice.

  3. Bring to a simmer; cover and cook 5 minutes. Stir gently. Let stand, covered, 2 minutes before serving.

VARIATIONS: Prepare as recipe directs, except:

  • For Succotash Soup, add 32 oz. chicken or vegetable broth to prepared Succotash Rice and heat over medium-high.
  • Stir In Ideas:  Add 1 cup diced, cooked ham or cooked, crumbled bacon and/or 1 cup diced fresh tomatoes to Succotash Rice at end of cook time.  Cover pan 5 minutes to heat through.
