Succotash Rice
Prepare a quick, buttery succotash with rice to make a 2-in-1 side dish. Add broth to create a savory soup in a snap.
2 Tbsp. butter
1/2 cup chopped onion
1/4 tsp. dried thyme
2 cans (14.5 oz. each) Del Monte® Vegetable & Bean Blends Classic Style, not drained
1 1/2 cups water
1 1/2 cups uncooked instant white rice
Melt butter in a large saucepan over medium heat. Add onion and thyme and cook 3 to 4 minutes or until onion is softened.
Stir in vegetables, water and rice.
Bring to a simmer; cover and cook 5 minutes. Stir gently. Let stand, covered, 2 minutes before serving.
