2 cups prepared garlic croutons

2 cans (14.5oz.ea.) Del Monte® Original Recipe Stewed Tomatoes [or Del Monte® Italian Recipe Stewed Tomatoes], drained

1 Tbsp. fresh thyme [or 1 tsp. dried thyme ]

3 Tbsps. olive oil, divided

½ cup grated Parmesan cheese, (2 oz.)


  1. Heat oven to 425°F. Coat a shallow 1 1/2 to 2-qt baking dish with non-stick cooking spray.

  2. Place croutons in a resealable plastic bag; crush to a coarse-crumb. Combine tomatoes, 1/2 of croutons, thyme and 1 Tbsp. olive oil. Toss gently and spoon evenly in prepared baking dish.

  3. Toss together remaining crushed croutons, Parmesan cheese and 2 Tbsp. oil in a small bowl. Sprinkle crouton mixture over tomatoes. Bake 20 minutes or until golden brown.
