Farm-Style Skillet Sausage and Potatoes

Canned potatoes and corn make quick work of this sausage and onion side dish. Serve with scrambled or fried eggs for breakfast or as a comfort-food dinner.
2 tsps. vegetable oil, divided
3 chicken sausage links with apples (3 oz. each) [or 9 oz. smoked turkey sausage], halved lengthwise and thinly sliced
1 cup diced onion, about 1 large
1 can (14.5oz.) Del Monte® Diced New Potatoes [or Del Monte® Sliced New Potatoes], drained and quartered
1 can (15.25oz.) Del Monte® Fiesta® Corn, drained
1½ tsps. fresh thyme [or 1/2 tsp. dried thyme]
Heat 1 tsp. oil in a large non-stick skillet over medium-high heat. Cook sausage 4 minutes or until browned.
Add remaining 1 tsp. oil and onion. Cook 3 minutes or until onion is beginning to lightly brown, stirring frequently.
Stir in potatoes, corn and thyme. Cook 3 to 4 minutes or until heated through.
NOTE: To make Farm-Style Hash, prepare recipe as directed, except serve cooked sausage and potato mixture over scrambled eggs.
