Ingredients

1 package (10 oz.) Del Monte® Veggieful® Riced Cauliflower Southwest

Sauteed shrimp (also tastes great with rotisserie chicken, grilled steak slices, sauteed portobello mushrooms)

1/2 Avocado

Cilantro

Green onions

Tomatoes or cherry tomatoes

Pico de gallo or salsa

Plain Greek yogurt or light sour cream

Squeeze of lime juice

Tortilla chips

Directions

  1. For each serving, place some coarsely shredded romaine lettuce in a bowl.

  2. Heat Veggieful® Southwest Riced Veggies as package directs in the microwave.

  3. Spoon about 1/3 to 1/2 of the hot riced veggies over the lettuce. 

  4. Artfully arrange in clusters over the riced veggies, any of the following:

    Sauteed shrimp (also tastes great with rotisserie chicken, grilled steak slices, sauteed portobello mushrooms)

    Diced avocado

    Chopped cilantro

    Sliced green onions

    Chopped tomatoes or cherry tomatoes

    Pico de gallo or salsa

    Plain Greek yogurt or light sour cream

    Squeeze of lime juice

    Tortilla chips
