1 can Del Monte Mandarin Oranges in Extra Light Syrup

2 eggs

3 Tbsps oil

1/3 cup cacao powder

3/4 cup brown sugar

1 tsp vanilla

Zest of 1 orange

1 tsp baking soda

1 tsp baking powder

1 3/4 cup flour

1/4 tsp salt


1 cup heavy cream

1/3 cup brown sugar

1/2 cup cacao powder

1 tsp vanilla extract

1/4 tsp salt


  1. Preheat oven to 350 degrees F

  2. Blend mandarin oranges (not drained) for just a few seconds.

  3. In a medium mixing bowl, whisk together mandarin juice, eggs, oil, brown sugar, orange zest and vanilla. Add in flour, baking soda, baking powder and salt and mix until no clumps remain.

  4. Fill 12 lined muffin slots almost to the top. Bake for 22-24 min.

  5. Let cool, top with frosting and extra mandarin slices.
