Peach Caprese Salad

Peaches replace tomatoes in this layered fresh mozzarella Italian- influenced salad. Your family will be delighted with the flavor switch. Drizzle with olive oil or make the quick peach vinaigrette.
2 can (15oz.each) Del Monte® Lite Peach Halves
8 oz. fresh mozzarella, cut into 8 slices
8 large fresh basil leaves
1 tsp. olive oil
Sea salt and freshly cracked black pepper, to taste
Drain peaches, reserving syrup from one can to make vinaigrette, if desired.
Slice peaches by placing peach halves cut-side-down on a cutting board. Place a hand gently on top of peach and cut across horizontally. Cut small peach halves into 2 slices, and large peach halves into 3 slices.
Arrange peach slices, mozzarella slices and basil leaves alternately on 4 individual salad plates.
Top each salad with a drizzle of olive oil and a light sprinkling of salt and pepper, or Peach Vinaigrette (recipe below).
Peach Vinaigrette: Whisk together reserved peach syrup (approximately ½ cup), 1 Tbsp. white wine vinegar, 1 tsp. olive oil and 1 tsp. Dijon mustard. Season to taste with sea salt and black pepper, if desired.
NOTE: Fresh mozzarella is found in the supermarket’s specialty cheese section.
