Italian Tomatoes and Green Beans

A tomato and green beans side gets an Italian make-over with a tomato sauce reduction, a drizzle of olive oil and sprinkle of Parmesan cheese.

A tomato and green beans side gets an Italian make-over with a tomato sauce reduction, a drizzle of olive oil and sprinkle of Parmesan cheese.

Ingredients
2 cans (14.5oz.ea.) Del Monte® Cut Green Beans, drained 2 cans (14.5oz.ea.) Del Monte® Diced Tomatoes, not drained 2 Tbsps. fresh basil [or 2 tsp. dried basil], chopped 1 Tbsp. olive oil ¼ cup Parmesan cheese, optional
Directions
  1. Combine tomatoes, green beans and basil in a large saucepan. Bring to a boil; reduce heat to medium-low. Cover and simmer 10 minutes.
  2. Drain vegetables over a large bowl, reserving sauce. Return sauce to saucepan, and transfer drained vegetables to the large bowl; cover to keep warm.
  3. Bring sauce and olive oil to a boil over high heat; boil, uncovered, 5 minutes or until reduced to 1/2 cup. Pour sauce over vegetables and sprinkle with cheese, if desired.
-Recipe can be doubled. -One can (28 oz.) Del Monte® Diced Tomatoes with Garlic, Basil and Oregano can be used. -One can (14.5 oz) Del Monte® Italian Cut Green Beans can be used.
