Zesty White Corn Chili

Quick weeknight meal or crowd-pleasing party food, this chili is cooked perfectly with diced tomatoes and two types of peppers. Serve with sliced green onion, cilantro and shredded Cheddar cheese for topping.

Ingredients
1 lb. lean ground beef 1 Tbsp. chili powder 1 can (15.25oz.) Del Monte® Whole Kernel White Corn, drained 1 can (15oz.) reduced-sodium kidney beans, rinsed and drained 2 cans (14.5oz.ea.) Del Monte® Diced Tomatoes with Zesty Mild Green Chilies, not drained 1 can (6oz.) tomato paste 1 can (4oz.) diced jalapenos, drained 1 cup water Optional Toppings:
  • Chopped fresh cilantro
  • Sliced green onions
  • Shredded Cheddar cheese
 
Directions
  1. Brown beef in a large saucepan over medium-high heat; drain. Stir in chili powder.
  2. Add remaining ingredients, except toppings. Bring to a boil over high heat; reduce heat to low. Simmer, uncovered, 10 minutes, stirring frequently.
  3. Serve with toppings, as desired.
