  • 2 cans (15 oz. each) Del Monte Lite® Sliced Cling Peaches
  • 1 lb. medium shrimp, cooked and shelled
  • 8 oz. medium pasta shells, cooked and drained
  • 8 oz. Chinese pea pods, blanched
  • 1 cup thinly sliced radishes
  • 1/2 cup pitted ripe olives
  • 1/3 cup fresh lime juice
  • 3 Tbsp. Dijon mustard
  • 2 Tbsp. finely chopped red onion
  • 1 to 2 Tbsp. Asian toasted sesame seed oil
  • 1/2 tsp. hot pepper sauce, or to taste

Cooking Directions

1. Drain peaches, reserving 1/2 cup liquid; set aside.
2. Combine peaches, shrimp, pasta shells, pea pods, radishes and olives in large salad bowl.
3. Combine reserved liquid, lime juice, mustard, onion, sesame seed oil and hot pepper sauce in small bowl; mix well. Pour over salad and toss gently.
