Ingredients

  • 2 cups Del Monte® SunFresh® Mango, drained and cubed
  • 3 medium skinless, boneless chicken breast halves, cut in cubes
  • 1 cup green pepper strips
  • 2 garlic cloves, minced
  • 2 Tbsp. minced fresh ginger
  • 1/2 tsp. red pepper flakes
  • 2 Tbsp. oil
  • 1/2 cup stir-fry sauce or sweet and sour sauce
  • 1/4 cup sliced green onions
  • (Optional) salt
  • (Optional) pepper
  • (Optional) rice

Cooking Directions

1. Cook chicken, green pepper, garlic, ginger and pepper flakes in oil in large skillet, 5 minutes or until chicken is no longer pink. Season to taste with salt and pepper.
2. Stir in sauce and green onions; cook 2 minutes.
3. Add fruit and heat through. Serve with rice, if desired.
