Italian-Style Chicken and Noodles

Ingredients

  • 1 can (14.5 oz.) Del Monte® Diced Tomatoes with Basil, Garlic and Oregano-No Salt Added undrained
  • 1 can (14.5 oz.) College Inn® Chicken Broth with Roasted Vegetable & Herbs
  • 1 lb. skinless, boneless chicken breasts, cut into 1/2-inch strips
  • 2 cloves garlic, minced
  • 2 cups (about 8 oz.) sliced mushrooms
  • 1 tsp. dried basil leaves
  • 1 Tbsp. vegetable oil
  • 1/2 cup white wine or water
  • 4 cups uncooked dried medium egg noodles
  • 1/2 cup grated parmesan cheese

Cooking Directions

1. Heat oil in large saucepan over high heat. Add chicken, garlic, mushrooms and basil; cook about 4 minutes, stirring frequently.
2. Add undrained tomatoes, broth and wine; bring to boil.
3. Stir in noodles; cook, uncovered, over medium heat 6 to 7 minutes until chicken is no longer pink and noodles are tender and liquid is absorbed, stirring once.
4. Stir in cheese.
