Chili Stuffed Potatoes

Ingredients

  • 1 can (14.5 oz.) Del Monte® Whole Kernel Corn-No Salt Added, drained
  • 1 can (14.5 oz.) Del Monte® Petite Diced Tomatoes-No Salt Added
  • 1/3 cup Del Monte® Tomato Ketchup
  • 4 medium baking potatoes
  • 1 lb. lean ground beef
  • 1/2 cup chopped green pepper
  • 1 Tbsp. chili powder
  • (Optional) light sour cream
  • (Optional) cheddar cheese
  • (Optional) sliced green onion

Cooking Directions

1. Pierce potatoes with fork; cook in microwave on high (100%) power for 16 minutes or until soft, rotating halfway through.
2. Brown meat in large skillet; drain.
3. Stir in corn, undrained tomatoes, ketchup, green pepper and chili powder.
4. Cover and simmer 10 minutes.
5. Slit potatoes; spoon about 1 cup meat mixture over each potato.
6. Garnish with sour cream, shredded cheese and green onion, if desired.
