Ingredients

  • 1 can (14.5 oz.) Del Monte® Cajun Recipe Stewed Tomatoes
  • 1/4 cup Del Monte® Tomato Paste
  • 1 Tbsp. olive oil
  • 1 cup chopped onion
  • 1 cup thinly sliced celery
  • 1 cup chopped green pepper
  • 1 clove garlic, minced
  • 3/4 tsp. thyme
  • 1/2 lb. medium shrimp, peeled and halved lengthwise
  • (Optional) rice

Cooking Directions

1. Combine oil, onion, celery, green pepper, garlic and thyme in 1-1/2 quart microwavable dish.
2. Cover and cook on high 3 minutes or until tender-crisp. Add shrimp, undrained tomatoes and tomato paste.
3. Cook on high 6 minutes, stirring halfway through or until shrimp is pink. Serve with rice, if desired.
