First, a little background on Celiac Disease. Celiac disease is a disease that a damages the lining of the intestinal tract. People with Celiac Disease cannot tolerate gluten, a protein that is found in wheat, rye and barley. When people with Celiac Disease eat a food or consume a product that contains gluten, their immune system kicks in and destroys the lining of the intestinal tract which causes decreased absorption of all nutrients.
